Spices and Seasonings
A lot of times you'll find a recipe calling for "poultry seasoning" or "pumpkin pie spice". Find how to make your own here. Also if you find yourself out of baking powder or buttermilk, you'll find the substitution recipes here. There are also a couple of recipes for rubs.
Seasonings and Rubs
Herbs and What Goes With What
Basil - tomatoes, tomato sauces, peas, squash, lamp, fish, eggs, tossed salad, cheese, potatoes, pasta
Bay Leaf - vegetable and fish soups, tomato sauces, poached fish, meat stews
Dill - Fish, cream cheese, cottage cheese, potatoes, fish, vegetable salads, pickles, tomatoes
Marjoram - fish, vegetable soups, cheese dishes, stew, res, oast chicken, beef, pork, stuffing
Oregano - tomato sauces, pork, pizza, vegetable and fish salads, chili
Parsley - meats, vegetables, soups, eggs, cheese
Rosemary - poultry, stuffing, potatoes, cauliflower, fish
Sage - stuffing, pork roast, sausage, poultry, hamburgers
Savory - eggs, meats, salads, chicken, soups, stuffing
Tarragon - fish sauces, egg and cheese dishes, green salads, pickles, chicken, tomatoes, sauces for meats and vegetables
Thyme - soups, stuffing, beef, pork dishes, eggs, cheese, bean and vegetable soups, fish
Pumpkin Pie Spice
4 tablespoons ground cinnamon
4 teaspoons ground nutmeg
4 teaspoons ground ginger
3 teaspoons ground allspice
Poultry Seasoning
2 teaspoons sage
1 1/2 teaspoons thyme
1 teaspoon marjoram
3/4 teaspoon rosemary
1/2 teaspoon nutmeg
1/2 teaspoon pepper
Italian Seasoning
1/4 cup dried basil
2 tablespoons each dried thyme, marjoram, rosemary, oregano, and coriander
2 teaspoons garlic powder
1 teaspoon sugar
Pickling Spice
2 tablespoons whole mustard seeds
1 tablespoon whole allspice berries
2 teaspoons whole coriander seeds
1 teaspoon red pepper flakes or more to taste
1 teaspoon ground ginger
2 bay leaves, crumbled
2 cinnamon sticks, broken in half
6 whole cloves
Lebanese Spice Mix
Equal amounts of allspice, black pepper, white pepper, cinnamon, ground cloves, ground nutmeg, and coriander.
Lebanese Herbal Mix
1 cup dried wild thyme or thyme with oregano
1/4 cup dried marjoram
3/4 cup ground sumac
3/4 cups sesame seeds
1/2 teaspoon cumin
1/2 teaspoon coriander
1/2 teaspoon good fennel
1/2 tablespoon ground anise
1/2 tablespoon cinnamon
1/2 tablespoon salt
1 serving - 2 teaspoons mixed well with 2-3 teaspoons olive oil mixed into a paste
Taco Seasoning
1 part chili powder
1 part cumin
1 part garlic powder
1/4 part crushed red pepper
Little oregano
Mix and store in airtight container. Add a little stock when cooking and simmer off.
Montreal Steak Seasoning
Equal parts garlic powder, dill, coriander, black pepper, red pepper flakes, paprika, thyme and then salt to taste.
Irish Mixed Spice
1 tablespoon ground corriander
1 crushed cinnamon stick
1 teaspoon ground cloves
1 teaspoon ground allspice
1 tablespoon ground nutmeg
2 teaspoons ground ginger
Irish Beef Rub
2 tablespoons olive oil
1 tablespoon pepper
1 tablespoon Kosher salt
2 tablespoons soy sauce
1 tablespoon parsley
1/2 teaspoon thyme
1/2 teaspoon tarragon
2-3 tablespoons Dijon mustard (optional)
Combine all and rub all over beef. Place on hot grill turning every 5-7 minutes. Tent with foil and let rest 10 minutes before slicing.
Substitutes
Baking Powder
4 ounces cream of tartar
5 ounces baking soda
1 pint flour
Sift all together 4 times.
Baking Powder #2
Combine 1/2 teaspoon baking soda with 1/2 teaspoon buttermilk or plain yogurt.
Baking Powder #3
Mix equal parts lemon juice with baking soda
Baking Powder #4
1 teaspoon baking soda and 2 teaspoons cream of tartar.
Buttermilk Substitutions
Lemon and Milk - In a one cup measuring cup add 1 tablespoon lemon juice. Top with milk. Stir and let sit for 2 minutes.
Yogurt and Milk - Mix 3/4 cup plain yogurt with 1/4 cup milk.
Milk and Cream of Tartar - Mix 1 cup milk with 1 3/4 teaspoons cream of tartar. To ensure the mixture doesn't get lumpy, mix the cream of tartar with 2 tablespoons of milk. Once mixed add the rest of the milk.
Brown Sugar
1 cup sugar
1 tablespoon molasses
Mix well with mixer. Store in airtight container.
Butter
For 1 cup use:
1 cup shortening
1/2 teaspoon salt
Whole Milk
For 1 cup use:
1/3 cup nonfat dry milk
1 cup water
2 tablespoons melted butter
